Aogami #1 (blue carbon steel) is prized for its edge retention, easy sharpening, extreme sharpness. The knives have a rustic blacksmith finish known as a kurouchi finish. Instead of further polishing the knife after the forging process, the knife maker leaves the residue on the knife.
